Went up to Evanston this weekend, and I stopped by the Hoosier Mama Pie Company. The pie of the week was something called "Atlantic Beach pie", and the sign said that it was the pie of the week for the second week in a row.
With an endorsement like that, of course, I had to try a slice.
It was a delicious lemon meringue pie that has an unusual crust made from crushed Saltines. It works very well with the sweet lemon filling. Apparently this is a North Carolina pie, according to this NPR article on the pie. I recommend that all you pie fanciers out there give this one a try, because it's pretty excellent.
